Olio vs. Olive Oil
These are two unique blends of exra virgin olive oil - different blends of olives, different times of harvest, different flavors. We love them both, and invite you to first take a tablespoon of each to compare and contrast.
OLIO NUEVO, or new oil, is our limited first pressing. We start here each season, hand-harvesting fruit from the trees that are just starting to ripen. Anywhere you'd be inclined to add pepper or some heat, think olio. Let this green, spicy oil flow on salads, juicy fruit, ripe cheese, crudos, and pots of soup. This is the perfect bottle for the oil obsessed.
