This is olive oil in its purest form, a brief and triumphant proclamation of the season's start, to be used promptly and abundantly. Our Olio Nuevo is a bright, intensely fresh extra virgin olive oil from the early autumn fruit, plucked from the trees at the first hint of ripening and then cold-pressed immediately, capturing the young olives at the height of their flavor and nutritional value. All of that vigor and freshness translates to an oil that is notably luminous and lively, with a bold flavor that lingers on the tongue.
First Pressing

The Olio Nuevo is the first pressing of the season's harvest, and each harvest is a little different depending on which trees in the groves ripen first and has a different blend than our classic harvest oil. The yield is very low making our Olio Nuevo a limited edition and a favorite of oil lovers.

Olio Nuevo means new oil, which is a perfect name for this oil as it's the first pressing at the top of the season. Here in California, our harvest season starts in early November, with a motley mix of trees starting to show signs of ripening. Our Olio Nuevo is an ever-evolving blend of the early fruit, making each harvest a little different. It typically includes some of our rarer olive varietals in the mix. Because it has a head start against the rest of the harvest, it usually is available first and starts a brilliant shade of golden green. Our yield is very low, making our Olio Nuevo a limited edition and a favorite of oil lovers. We describe it as the Beaujolais Nouveau of olive oil - meant to be enjoyed right away while brimming with some much life and flavor.

Both oils are certified extra virgin and harvested very young for the highest dose of polyphenols. In short, the flavor is different and the shelf life is different for these two bottles. Our classic harvest is a signature blend that offers a bright, herbaceous flavor. The matte black bottle protects from the sun, making it a pantry staple, lasting about 2 years from the harvest date. The Olio is a celebration oil, a limited pressing we do each harvest season to commemorate the season. This blend varies from year to year, but typically, you can expect a very green, peppery oil with plenty of fruit to balance it. It lasts about 1 year from the harvest date. The clear glass bottle is a reminder to enjoy and use with abundance.

Our Classic Olive Oil is best within 2 years of the harvest date on the top of the cork, and the Olio Nuevo is best within 1 year.
