Tuna Toast

Friends of the Valley Casey and Ally recently opened the doors to their first Canyon Coffee shop in Echo Park. Not only is the space beautiful and the coffee and tea brewed to perfection, but they have a delicious selection of toast and sandwiches on the menu. Here’s the recipe for the cafe favorite, Tuna Toast.

Ingredients

  • A 3/4” slice of your favorite bread
  • Herbed mayo
  • Ortiz tuna
  • Shallots
  • Parsley
  • Capers
  • Lemon juice
  • Aleppo peppers

Recipe

  1. Cut & toast a 3/4” slice of your favorite bread (we use a pullman sandwich loaf by Bub & Grandma’s in Echo Park)
  2. Spread herbed mayo
  3. Lay tuna on top of mayo, flatten out with a fork to distribute evenly across the bread
  4. Sprinkle 1 tsp capers
  5. Add pinch of aleppo pepper (spread evenly across)
  6. Add shallots
  7. Garnish with parsley
  8. Spritz of lemon juice Drizzle of Wonder Valley Olive Oil
  9. Pinch of salt to finish

Meet Canyon Coffee

Ally and Casey started Canyon Coffee back in 2016 to share their passion for the ritual of coffee and the warmth it brought to their mornings. After selling their coffee wholesale and online for 6 years, they just opened their first coffee shop in August. Tucked in a corner unit of a building at the heart of Echo Park, they serve up their coffee alongside delicious, substantial toast and fresh-squeezed orange juice — and a selection of coffee and tea drinks on tap.

It took me a long time to realize the secret to better grilled eggplant is to reverse things a bit and season it after grilling. Marinating the sponge-like vegetable post-grill means it fully absorbs and locks in flavors, which here is a savory combination of olive oil, sherry vinegar, garlic, and smoked paprika. Finish things off with crumbled feta and torn fresh mint for the ultimate summer side.
